Day 4 post card
June 15, 2007

Last day at the 2007 NACC conference.

After breakfast we took a look at what is coming at the 2008 conference in Las Vegas.  UNLV has started their planning to make next year a great conference.  Next year the dates will change slightly because of events at UNLV already scheduled.  In 2008 mark your calendar June 17th – June 20th, the UCMT class will follow the conference June 20th - 23rd.   They have a river adventure down Black Canyon with a stop at Hoover Dam for the fun pre-conference activities.  The golf outing is also being planned.  We will spend a couple days at Thomas and Mack Arena another at Sam Boyd Stadium.  Dinner at the Rio Hotel, which has the largest buffet in town.  Look for the conference mailer with full details coming this Fall.

We began the education sessions with the review of the Concession Menu Survey.  For those members that submitted menu data, but were unable to attend the conference we will mail you a copy by the end of June.  Please contact the NACC office (info@nacc-online.com) if you do not receive your copy by then.

The next session was an open forum was facilitated by Dave Hrechkosy and Dave Bullock.  The members were able to bring up all types of concession questions; we discussed NACC growth, what member’s interests were in continuing the small on-site visits during the year.  This past year we had NACC member site visits at West Virginia and Wisconsin.  Members showed interest in hosting the on-site visits again, we will be sending out information soon regarding the dates and locations for the visits.

The last education topic before lunch was done by Peggy Barnett from West Virginia University.  She took us through her football game day operations.  She did a great job and had the whole group in stitches with some of her power point slides.

Our education session after lunch discussed In-house vs. contract concession operations.  Aaron Black did a great job of going through the operations as he has experience working for a company as well as in-house operations.  The group had an interesting discussion.

   

   

We ended the conference by taking a tour of the Breslin Center and Munn facility.

Day 3 post card
June 14, 2007

Hello from Lansing Michigan,

Day three at the NACC conference started off with a nice buffet breakfast.

First order of business was voting for the two open spots on the NACC Board.  Congratulations to Joe Carney from University of Wisconsin and Ken St. Clair from Gehl’s Guernsey Farms.

We began the education sessions today with a round table format.  The members broke into four groups; each speaker gave us a thirty minute presentation of their topic.  Education topics covered were request in last year’s conference exit survey.   Paul MacGregor – University of Massachusetts, spoke on portable concession operations.  Dan Robertson – University of Maryland, spoke about the training & operations manual that he developed last year for the non-profit groups.  Debbie Henderson – Texas A & M provided the group with the cash handling procedures used at Texas A & M.  Kevin Ayres – State Street Snacks, had an open discussion about growth – how everyone had grown their concession operation in the past year.  All four topics provided a great opportunity for the members to hear ideas on how other members run their operation.  Whether your operation is small or large you could take something from this education session. 

Last year Bill Kost and Alan Wilkinson – Michigan State University started a topic on transaction times.  This year we had part II, they went into more detail in the class room then took the members down to the stands in the football stadium for some hands on discussion.

Dinner tonight was in the LaSalle Club at the football stadium.  Vendor and University members had a chance to relax after a busy day of education sessions and tour.  The MSU catering department did a great job with dinner.

Day 2 post card
June 13, 2007

Hello from Lansing Michigan,

Guy Procopio, Assistant Auxiliary Service Manager welcomed the NACC to the Michigan State University campus.  Following Guy was a welcome from Shelley Appelbaum, Senior Associate Director/SWA at MSU.

    

During the general session the Ron Athey Award was presented to Terry Murawski, University of Wisconsin.  The award was presented by last year’s recipient, Hope Kaser, University of Notre Dame.

Winners of the Wednesday night scavenger Hunt was Judy Grotts – UNLV, Barbara Sanders – Murray State, Debbie Huneycutt – Arkansas State and Michelle Minton – Arkansas State.  As winners they each won a $50 bill.

We began the education sessions with Hope Kaser – University of Notre Dame, Kathleen Fulcher – University of Notre Dame and Amy Luttrell – Coca Cola Bottling.  They did a great job explaining how they have used vendor sponsors to help grow their sales and provide nice uniforms for the supervisors.  Hope brought sample of the game day shirts/jackets provided by vendors and gifts for the whole group.  (We are talking Hope Kaser of course she brought gifts for everyone!)

Presenting next was Mike Schemberger – University of Wisconsin and Grant Reed – Georgia Tech.  There were several members that requested this topic in the exit survey last year.  Review contracts samples for Non-Profit Groups and Sub-Contractors.   They review their own contracts that their Universities use and we had a few other members supply samples of their contracts.  We had a great discussion I think everyone was able to take something from this topic.

Our next education topic was Eric Brandt from University of Oregon put together a survey this year.  We asked members to submit the survey in addition to the annual Menu Survey.  Eric went over the surveys that were submitted and the theory behind the information he is trying to gather.  We will try this survey again next year now that members have a clearer understanding of the benefits that the data can provide.

We had a break from education for the annual tradeshow.  This gave members a chance to taste test several new products and discuss products with new and returning vendors.  There were several new products to talk about with vendors this year.  Thank you to all participating companies in making this a fantastic tradeshow at MSU.

      

Dinner on the MI Princess ship was delicious.  Members had a live band for entertainment on the main level of the ship.  On the third level of the ship members were able to utilize the poker chips that were supplied by the conference sponsors at the scavenger hunt and the tradeshow.  Members will be bidding on great gifts tomorrow their winnings.  Dinner was sponsored by State Street Snacks and J & J Snacks.  Entertainment on the ship was sponsored by Halo Cups.

Day 1 post card
June 12, 2007

The NACC annual golf tournament sponsored by Dynamic Drinkware was held at Forest Akers Golf Course.  The golfers had a great day for golf. 

The winning threesome this year was Bill Kost – MSU, Rob Berger – Johnsonville Sausage and Ken Holley

The other activity this year was a trip to Frankenmuth.  The group had a great time; some did shopping others walked around in town and found some fun things to do.  They all met up at the Sullivan’s Black Forest Brew Haus and Grill for lunch, adult beverages and a tour of the brewery.

   

After a great day of fun, the NACC conference kicked off this evening at the Opening Reception it was located at the Forest Akers golf course.  The evening was sponsored by Churchill Containers and Kernel Seasons.  Members had a chance to catch up with old friends, meet a few new ones, eat some good food and have a drink.  We included the popular, chair massage, for all those that we worn out from golfing and shopping.

   

The fun didn’t end there, members signed up to run the NACC scavenger hunt.  We made it a little harder on the groups this year.  They had to venture out of the hotel and find the NACC board members and sponsors.  There were extra credit points for those groups that really wanted to win the big prize.  We will announce the wining group in tomorrow’s post card.

Pre-conference post card
June 9-11, 2007

The University Concession Manager Training (UCMT) class came to a close today.  Three days of learning, sharing information, go over procedures and having some fun.

The class had an additional homework project the first night of class.  The class reviewed the concession operation at the Lansing Lugnuts baseball Park.  During the second day the class reviewed their findings.  This was a great hands on learning tool for the class.

The second day the class covered concession management, event reporting, and catering.  After a long day they had time to have some fun at dinner.

The final day was spent on purchasing, accounting and finance followed by the third and final exam. 

The three UCMT instructors, Mona Kloster – University of Kansas, Hope Kaser – University of Notre Dame and I would like to congratulate the class; they all passed the course.
