Postcards from the National Association of Collegiate Concessionaires Annual Conference
2011 Conference Attendees hosted by UMASS. 2011 Post Cards: Day four, the final day of the 2011 NACC conference from the University of Massachusetts Day four started off with Paul from UMASS talking about his mobile concessions operations. We added information from IRP and Corsair about carts of all sizes and price ranges. When permanent stands are not a possible option for your facility look at carts to fill the need.
UMASS recently completed the bid process for a mobile trailer, Dave explained the bid process and things to consider when you have to go through a capital equipment bid process. Eric Brandt, from the University of Oregon provided the group a look at what is coming at the 2012 conference. Eric and Jeff have started planning for next year’s conference already and are planning on; a reception at the Football stadium, dinner at a local micro brewery, a day on the coast going on a sand dune buggy ride. These are just a few things that they are looking into for next years conference. The golfer in the group will enjoy the gorgeous course and mild playing temperatures. We hope that travel restrictions loosen up so more NACC members will be able to join us next June 12-16. Look for the 2012 conference mailer with full details coming this Fall.
I would like to give a big thank you to the entire University of Massachusetts food service staff for all their hard work putting together the conference. Paul MacGregor coordinated a great conference full of fun, education and fantastic food that this group will not forget any time soon. It was a great conference. We want those that were not able to make it to this year’s conference know that we will be sending out our bi-annual news letter covering several of the education topics and post as many handouts as possible on our members side of the web site. Look for that in the next few weeks. Bob will be taking a look at the video that I took at the education sessions to see if they are good enough to post on the website as in previous years. The NACC is committed to making sure that learning and sharing of ideas is passed along to as many members as possible. Please keep the NACC website forum pages buzzing with questions and answers, as this is a great way to include members from all over the country. Also take a look at the product page throughout the year for new postings from our vendor members. Don’t forget to take a look at our latest feature at the NACC website, the “Vitural Trade Show”. This allows our NACC members the ability to see the products our tradeshow vendors have to offer. The link is on the home page and on the conference page (half way down the page by other trade show information). And just as a hint to vendor members, this is the kind of information you can provide on your New Products page that is included with your membership. Theresa Traulsen Day three of the 2010 NACC conference from University of Massachusetts Day three started off with the membership voting for the two open spots on the NACC Board. Congratulations Alan Wilkinson, Michigan State University for the Secretary position and Jennifer Armstrong, Agilysys for the vendor board position. We began the education session with guest speakers, Peg Rodgers and Kathleen Seelye. Peg and Kathleen are experts in the sustainability industry. We had a great discussion and I hope that everyone was able to take away something from this topic.
UMASS concession staff took the group on the facility tour of Mullins Center finishing at the Recreation Center for lunch at the smoothie bar.
After lunch we headed back to the Mullins Center for some afternoon education sessions. First up were 4 round table sessions. We discussed hawking programs, customer service, NPO groups and opening and closing procedures. Each topic was great and very informative. Look for several handouts to be posted on the members only side of the website. Also look for a story on each topic in the next copy of the Concession Bites newsletter coming out in July. Aaron Black lead the final education session of the day covering Sub-contractors. Aaron showed the group how to figure out what king of food product you should sub-contract. How to determine the type of commissions you should look at from sub-contractor sales, what percentage are you charging and what additional hidden costs are there? Look for a full story in the July newsletter.
Tonight was a relaxing dinner with some fun and games. Two local favorite restaurants help supply us with wings and pizza. After dinner it was time to team up and see how you did in the UMASS decathlon. Paul and his staff did a great job picking out some fun games and the weather was perfect for the outdoor event. First place for men was Bill Wells from Golden Link. First place for women was Jaci Lange from MSU. What great athletes!!
But we were all winners with prizes for all participants! NACC wants to thank the following conference sponsors for their support of the NACC. We will start with a breakfast in the Bluewall then finish the conference with education sessions on portable carts, trucks and tips on the bid process. Chuck from Maryland won the Hoop Shoot again with a score of 67. I will be back tomorrow with our fourth posting until then good night from UMASS. Theresa Traulsen Day two of the 2011 NACC conference from the University of Massachusetts Day two started with a welcome to the University of Massachusetts from Ken Toong, the Director of Dining Operations at the University. Thank you Ken for the warm welcome.
Joe and Theresa led the Ron Athey celebration. Ron Athey has been very instrumental in the growth of the NACC and his passing will be a great loss for the organization. Next was the general session, the group went over some NACC operational business. The formal nominations for the two open board positions were made and they are; Alan Wilkinson, Michigan State University or Aaron Black, BYU for the Secretary position and Jennifer Armstrong, Agilysys or Andy Sokolski, Whirley for the open Vendor seat on the board. The final vote is scheduled for 9:10 am Thursday morning.
The first education session on the schedule was reviewing the sales survey. Theresa Traulsen reviewed the online submissions. Then we broke-out into two smaller groups and discussed the details of the survey. The topics included the top 3 sports revenue chart. The break down of the percaps into three sections, concessions, subcontractor and beer sales. Maybe we need to clarify a few menu items better, Popcorn cups sizes, hamburger meat cooked or raw, size of personal pan, nachos need to put the ounces of cheese. We also discussed candy – what price, where should you sell and why. Maybe next year we place in the note section special events that you have done, like presidential visit, U2 concert, Olympic trials, and so on. As the survey is online the members in good standing can access the survey throughout the year and make updates as they happen. If you were not able to post final baseball sales before the survey deadline, you can make adjustments to your survey online. The time line to pay the NACC membership so that access to the sales survey will continue throughout the year is as follows. Your yearly membership needs to be paid between July 1, 2011 and September 15, 2011 for the membership year (July 1, 2011 – June 30, 2012). For those that don’t have the membership paid by September 15th each year the members side of the website will be turned off until their membership has been brought up to date. The 2011 trade-show was next on the agenda. We had a great group of 34 vendors that participated in the trade-show. Several are new vendors to the conference. We have a new feature at the NACC website “Virtual Trade Show”. Our Virtual Trade Show allows NACC members the ability to see the products our trade-show vendor has to offer. The link is on the home page and on the conference page (half way down the page by other trade show information).
We want to thank each of the vendors that presented at this year’s trade-show and hope that the members that were not able to join us at the conference take a look at the vendor’s company websites or call on the companies if they are interested in getting samples or product materials sent to them. (goto www.nacc-online.com, Directory page, there is a list of all vendors that are current members of the NACC. Click on a company name it will take you to each company website). We had a small break in the action for members to win prizes after the trade-show. The iPad 2 winner was Matt Meier from University of Utah. The afternoon education session was facilitated by Bill McQuerry. Open Forum – where members were able to discuss any topic. The UMASS Concession staff took the members on a tour of the concession stands at the Hampden Dining Hall and Alumni stadium. Then a behind the scenes operation and how he preps for the events out of his kitchens. I don’t know about anyone else but a tour of the operation is a great way to see how others have things setup, take a look at how that compares to your own operation and find little things that you can take back to your operation and use. The only thing better is seeing the operation in action.
We ended the day with dinner at the award winning Berhshire dining Hall sponsored by Johnsonville Sausage, White Castle, and Goodsource. The themed dinner was great!! Take a look at all of great food we had choices of along with all the beer and wine drinks you could handle.
After dinner it was time for a little NACC casino night gaming for prizes. Big winners were first prize Jaci from MSU, second - Lee from Klements, third Mimi from J & J snack foods, fourth Terri from Texas A & M, fifth Kate from Klements, sixth Bridget from SDSU and seventh Krystal from Kernel Seasons.
Back to the hotel for a little more social time in the hospitality room, some cards, air hockey, hoop Shoot won by Chuck from Maryland with 78 points and the final hockey game on TV – Boston wins the Stanley Cup!!! The NACC’s pre-conference activity this year was a tour of Boston, sponsored by J & J Snack Foods, Hershey's Candy and Dynamic Drinkware. While in Boston, the group toured Fenway Park: home of the Boston Red Sox. Aramark, the concessionaire, provided us with a behind the scenes look at one of the concession stands and answered a few of our questions. Our group then headed over to the Faneuil Hall area to have lunch, everyone was able to choose their own lunch spot. After lunch the Duck Boat picked us up and provided us with a land and sea tour of many of the historic sights in downtown Boston. After the Duck tour we headed back to the hotel for a break before dinner.
Hope Kaser and the NACC board had a short new member orientation to explain a little bit about the NACC and introduce the board members. Thank you everyone that was able to attend. After a full day of fun, the NACC conference kicked off the evening with our Opening reception sponsored by Churchill Containers, Vistar and Whirley. The NACC group and the Chef conference were able to catch up and relax with some great food and live entertainment. The lobster, steak, clam chowder, corn, potatoes, and a variety if desserts were really a great way to start the conference right.
Thank you to our sponsors of the afternoon and evening. The evening ended with some members going out on the town and others just kicked back at the NACC hospitality room back at the Grad Lounge. The winner of todays Hoop Shoot was Jaci from MSU with 70 points. Joe Carney was the winner of Monday nights Hoop Shoot contest with 66 points. Day two starts at 8:00 am with a hot New England breakfast buffet on the 11th floor of the hotel where our day’s meetings will take place. The Opening General Session will begin at 9:00 am, with the trade-show starting at 11:00 am. Tune in tomorrow for highlights of the day.
