Day four, the last day of the 2010 NACC conference from the University of Notre Dame
June 11, 2010

Day four started off with Notre Dames Human Resource Department talking to the group about keeping your resume up to date.  They provide a lot of great advice and answered question from the group. 

   

The second and final education session of the conference was a Credit Card Panel facilitated by University of Notre Dames IT credit card department.  They took the group step by step through the process of setting up credit cards in your concession operation.  It was a great learning experience as things are changing quickly in this area. It was nice to get some advice from experts that have to setup and deal with these issues.

   

Both sessions had power point presentations that we will post on the NACC web site, Archive page in the next few days.

Paul MacGregor, from the University of Massachusetts provided the group a look at what is coming at the 2011 conference. Paul has started the planning for next years conference already.  A reception at the Basketball Hall of Fame,  Clam Bake on campus, and a casino night are just a few things that we are looking at for next years conference.  We are looking at dropping the golf outing and the alternative activity and scheduling a trip to Boston as a group activity.  We all hope that the Boston Red Sox can schedule a game for us to attend that day.   If not we will plan on a tour of the Boston Red Sox ball park and a duck boat tour of the historical sites of Boston.  We hope that travel restrictions loosen up so more NACC members will be able to join us next June 13-17.  Look for the 2011 conference mailer with full details coming this Fall.

After a constructive morning of education sessions some members were able to stay around for a baseball game in Chicago.  The Chicago Cubs vs. Chicago White Sox, what a treat.  Guess what Chicago won!!  Thank you State Street Snacks for sponsoring the baseball trip.

   

   

   

   

Most of the group came back on the bus and had a late dinner provided by Tailgater Toby and Notre Dame Dining Service.

I would like to give a big thank you to the entire University of Notre Dame food service staff for all their hard work putting together the 2010 conference.  Hope Kaser coordinated a great conference full of fun, education and fantastic food that this group will not forget any time soon. 

It was a great conference.  We want those that were not able to make it to this year’s conference know that we will be sending out our bi-annual news letter covering several of the education topics and post as many handouts as possible on our members side of the web site.  Look for that in the next few weeks.  Bob will be taking a look at the video that I took at the education sessions to see if they are good enough to be posted on the website like last year. 

The NACC is committed to making sure that learning and sharing of ideas is passed along to as many members as possible.  Please keep the NACC website forum pages buzzing with questions and answers, as this is a great way to include all members from all over the country, not just those that are able to attend the conferences.  Also take a look at the new products page throughout the year for new postings from our vendor members.

Day three of the 2010 NACC conference from Notre Dame
June 10, 2010

   

Day three started off with the membership voting for the two open spots on the NACC Board.  Congratulations Chuck Aldridge University of Maryland and Mike Jacob with Churchill Containers.

We began the education session with a guest speaker, Gar Trusley.  Gar has been a faculty member of Executive Education at the Ross School of Business at the University of Michigan for over 20 years.  Our morning session with Gar was Effective Delegation skills.

   

   

We had a great discussion and I hope that everyone was able to take away something from this topic. 

After lunch provided by the University of Notre Dame catering department, we came back together with Gar and discussed motivation and work satisfaction. 

   

   

Both sessions with Gar were fantastic.  The room was packed with NACC members, vendors and Notre Dame Dining Service managers all day.  The feedback from everyone was very positive

We will have video of the education session posted on the member’s side of the NACC website soon, along with the handout from the session.

After a long day of education sessions the members were ready to stretch their legs and take a tour of the concession stand at the football stadium.  Hope’s staff had a couple stands open for us to take look at how her operation is setup.  One of their concession trailers was open for us to walk through.

   

Dinner tonight was at the Studebaker Museum.  A great display of cars to walk through and work up an appetite.  One of Hope’s subcontractor Nelson’s BBQ provided a great BBQ dinner for the group.

We will start early tomorrow, 8:00 am in the Salon C meeting room at the Marriott Hotel.  We will start with a hot breakfast and a couple education sessions facilitated by University of Notre Dame, the Human Resource department and IT credit card department.  Those going to the baseball game make sure you are at the bus by 11:15 am.  Beverages and a box lunch will be provided on the bus for the trip up to Chicago.

Day two of the 2010 NACC conference from Notre Dame
June 9, 2010

Day two started with a welcome to the University of Notre Dame from Jim Lyphout, the Vice President of Business Operations at the University of Notre Dame.  Thank you Jim for the warm welcome to the university of Notre Dame.

Hope Kaser and Chuck Aldridge presented the 2010 Ron Athey award to Dave Bullock, University of Maryland Assistant Director.  Dave has been very instrumental in the growth of the NACC over the past several years and is very deserving of the Ron Athey award.  It was a nice touch with the Diet Coke tribute, I am sure the Diet Coke Christmas tree lights will make a nice addition to your tree next year.

Next we went into the general session where the group went over some NACC operational business.  The formal nominations for the two open board positions were made and they are, Chuck Aldridge, University of Maryland and Alan Wilkinson , Michigan State University for the Secretary position and Mike Jacob with Churchill Containers and Joe Blando with Dynamic Drinkware for the open Vendor seat on the board.  The final vote is scheduled for 9:10 A.M. Thursday morning.  We have one additional nomination for the University board position, Judy Grotts from UNLV.

The first education session on the schedule was reviewing the 2010 sales survey.  Theresa Traulsen reviewed the online submission.  The group discussed the proposed change to the top 3 sports revenue chart.  The idea is to break down the per caps into three sections, concessions, subcontractor and beer sales.  We also discussed how per caps were being calculated, gross sales or net and what portion of the sub contractor sales are being used.  It looks like the majority of members are calculated per caps using net sales and then using only the portion of subcontractor sales that they receive.  In the summary section we talked about the candy page.  Is there a value in this page with so many different sizes posted?  No, so we will take that list out of the summary page next year.  Other items discussed were the shift in the top 5 menu items, healthy food items being added, price changes, and are combo meals still popular and how are you pricing them.

As the survey is online the members in good standing can access the survey throughout the year and make updates as they happen.  So if you were not able to post final baseball sales before the survey deadline, you can make adjustments to your survey online.

The time line to pay the NACC membership so that access to the sales survey will continue throughout the year is as follows.  Your yearly membership needs to be paid between July 1, 2010 and September 15, 2010 for the membership year (July 1, 2010 – June 30, 2011).  For those that don’t have the membership paid by September 15th each year the members side of the web site will be turned off until their membership has been brought up to date.

The 2010 trade show was next on the agenda.  We had a great group of 42 vendors that participated in the trade show.  Several are new vendors to the conference; take a look at the NACC web site Product page to see a few of them listing their products.  Over the next few weeks several additional vendors will be adding their information to this page.

We want to thank each of the vendors that presented at this year’s trade show and hope that the members who were not able to join us at the conference take a look at the vendor’s company web sites or call on the companies if they are interested in getting samples or product materials sent to them. We had a small break in the action for members to win prizes after the trade show.  The lap top winner this year was Maureen Quinones from the University of Maryland.  The video camera went to Chris Stewart from Northern Kentucky University, Rocky Houck from the University of Dayton won the iPod and Marybarbara Vandervliet from Hope College won the digital camera. 

The afternoon education session was facilitated by Bill McQuerry.  Open Forum – where members were able to discuss any topic.

We discussed concessions at graduation commencement, Hope Kaser reported her results from the first year that she served food at commencement.  We discussed tip jars, refilling soda cups, NPO insurance if one of their members gets injured and many other subjects.

The Notre Dame Concession staff took the members on a tour of the concession stands at the Arena.  I don’t know about anyone else but a tour of the operation is a great way to see how others have things setup, take a look at how they compare to your own operation and find little things that you can take back to your operation and put to use.  The only thing better is seeing the operation in action. 

   

We ended the day with dinner at the Stepan Center sponsored by Johnsonville Sausage, Rich Products, and Hershey Candy.  The Mardi Gras theme dinner was great!!  Here is a sample of the menu, Cajun rub T-Bone steak, crawfish, lobster etouffe, chicken jambalaya, shrimp and chicken gumbo, red beans and rice, fresh fruit salad, grandmas slaw, coconut bread pudding, banana fritters, pecan coated truffles, bourbon pea can flan, kings cake, all the beer, wine and frozen drinks you could handle.   After dinner it was time for a little NACC wiffle ball game.  Scores from the first game Blue 7 vs. Purple 6, Green 3 vs. Gold 2.  Then the second round of games Purple beat Gold 2 to 1 to win in the looser bracket.  Blue beat Green 10 to 5.  The winning Wiffle Ball team was Joe Blando, Ron Perrin, Ben Ruffle, Chuck Skowroruski, Larry Sanders, Ken Wright, Joe Deutsch, Chris Stewart, Mike, and team leader Hanna.

   

   

   

Back to the hotel for a little more social time in the hospitality room, some cards and a hockey game on TV.

Day one of the 2010 NACC conference from University of Notre Dame
June 8, 2010

The NACC’s annual golf tournament sponsored by Dynamic Drinkware was held at Notre Dame’s Warren Golf Course.  The golfers were up early to start golfing, the rain held off just long enough for the golfers to finish.  This Bill Coore & Ben Crenshaw designed course was difficult but it sounds like the group had a great time.

   

   

   

This year’s winner foursome consisted of Kevin Ayers, Dave Hrechkosy, Bob Scott and Ward Yando.  The longest putt was Dave Hrechkosy, closest to the pin was Brandon Ayers.  The longest drive winner was also Brandon Ayers.

   

   

The alternate activity this year was a tour of the Notre Dame campus, sponsored by Perdue Farms.  The group toured the football locker room and was able to take a picture with the “Play like a champion” sign, walked over to see the Old College which is the first building constructed, the Log Chapel, the famous Grotto, the Golden Dome, Basilica of the Sacred Heart, Huddle,  and a stop at the book store for some souvenir shopping.  Our group had a great lunch at Legends before heading back to the hotel for a break before dinner.

Hope Kaser and the NACC board had a short new member orientation to explain a little bit about the NACC and introduce the board members.  Thank you to everyone that were able to attend.

After a full day of fun the NACC conference kicked off with an evening at the College Football Hall of Fame.  The group was able to tour the museum during the reception.  NACC members were able to catch up and relax with some great food selected by Hope and Jessica.

The evening ended with some members going out on the town and others kicked back at the NACC hospitality room back at the Marriott Suite.

Day two starts at 8:00 am with a hot breakfast at the Joyce Center.  The Opening General Session will begin at 9:00 am, with the trade show starting at 11:00 am.  Tune in tomorrow for highlights of the day.
